 In my opinion, the best city in Australia. It has a great nightlife (try any club in Fitzroy or St Kilda) as well as having some great places for eats. The Jewish bakery's on St Kilda High Street are fantastic. Things to do: Grampian Mountains expeditions, Mornington Peninsula hot springs, Great Ocean Road day trip (or hire a car and do it for a few days) also penguins on Phillip Island are good. 
In terms of places to stay. If you want to be central, stay in Space Hostel which is super clean and tidy (almost like a travelodge) or stay in Nomads St Kilda which had a good bar and events in every night (boozy bingo and trivia night are the best nights).
